So today I thought I'd do something totally different and share with you, my fiendish followers, some of the cooking journey I've been on since the incident with Mr Nix. Of course, since then its been a case of finding things that he can eat... or wants to! :) It seems to me that I need to find a more updated version of these old faves.
Talking of old faves, I love a good Pork Roast. (Yummy!) So today I thought I'd share my latest favourite:
Roast Pancetta wrapped Pork Backstrap with Kipfler Potatoes
1kg Pork Backstrap
4 slices Pancetta
4 - 6 Kipfler Potatoes
2 cloves garlic (leave the skin on)
Wrap the Pancetta around the backstrap, toss on a sprig of lemon thyme and wrap with kitchen string. Drizzle on olive oil. Bake for 30 mins at 200c.
Meanwhile quarter the potatoes, slightly crush the garlic. Remove the meat from the oven and toss in potato and truss tomatoes, drizzle over good olive oil, add the garlic and a heavy pinch of salt.. Bake for another 30 in the oven at 200 C.
